Decadent Mocha Cake
This looks absolutely delectable! I think I will be doing this for the holidays - if I can hold out that long that is!
INGREDIENTS:
- 200g. of Milk Chocolate chips
- 100g. of unsalted butter
- 1/2 c. milk
- 1/2 c. powdered sugar
- 1 1/3 c. all purpose flour
- 4 Eggs (beaten)
- 3 Tsp. of Folger's Instant Coffee
- 1 Tbsp. of Water
- 1 Tsp. of baking powder
DIRECTIONS:
- Preheat oven to 350 degrees F (175 degrees C).
- Using a medium sized, heavy base sauce pan over low heat, add in 100g. of salted butter, 200g. of chocolate chips, 1/2 c. of powdered sugar and 1/2 c. of milk to chocolate mixture and stir until chocolate and butter have melted and mixture is well blended and creamy.
- Remove from heat and allow mixture to cool for 2-3 minutes. Then add to mixture the 3 tsp. of Folger's Coffee to 1 Tbsp. of warm water, with 4 lightly beaten eggs, 1 1/3 c. of all purpose flour and 1 tsp. of baking powder. Whisk all ingredients together until well blended. *Note - mixture will not be completely smooth.*
- Pour cake mixture into lightly greased round cake pans and place in preheated oven for 45-50 minutes or until an inserted wooden pick comes out clean. Cool in pans for 10 minutes and then turn out onto racks to cool completely.
- Top with your choice of icing, whipped topping or sprinkle with powdered sugar. (As desired.)
